Once somebody brought in a bucket of Kentucky Fried Chicken to our office. He started passing it around to everybody. It didn't taste quite right. Then he announced it was fried rattlesnake.

Sorry, leptraps, only some ducks, like cormorants eat fish, Mallards, widgeon, wood ducks(they eat nuts mostly), teal are all some of the species I used to hunt with Dad, duck is very tasty. Lots of ways to fix it, we liked orange sauce. Don't shoot a black duck, and you'll be fine. I've eaten buffalo, and beefalo, and ostrich, ostrich is interesting in it is very much like beef, but doesn't change color when cooked, buffalo- you can sleep well little buffalos, you taste terrible, that's one reason I think there is the beefalo, a hybrid, I knew a rancher and still think they're being raised. Frog legs, now who hasn't wondered?, I found them like chicken and smaller. All those exotics are expensive here, except for the random store that carries frog legs, and rabbit.

Frog legs might be one of the things I'll miss the most if our local Chinese buffet never reopens! They fried them in a light tempura batter with a healthy dose of black pepper. Nice thing is that I didn't have to fight the other patrons for them - they were all wrangling for the crab legs. My grandmother used to prepare a wonderful baked rabbit, but I haven't had that in decades - maybe I should get one for a Christmas gift to myself!
I had forgotten about one of the best wild meats I've tasted - moose! I was at a USDA meeting in New Hampshire a few years ago, held at a local hotel. The night before the meetings, someone local had hit a moose with their car, and the local wildlife agent had to dispatch it, and then offered it to the hotel kitchen. They cubed and braised it with carrots and green peppers - it was awesome. A very dark, rich meat with very little fat. One of the best meals I've ever had - and luckily it was an "all you could eat" buffet that I turned into a "I ate more than I should have"...

guy stuff.
My family processed wild game. The bigger the trophy rack the worse the meat.
If you ate it ; grill it via steaks you want a young animal. otherwise you soaked it in wine, buttermilk, etc. or ground it and mix it with domestic ground pork and spices for sausage , meat balls or meat loaf. Birds: eat carefully about the buckshot. squirrels and varmits including musk rats; soak with vinegar and bread and French fry.
The best part of the alligator is not tail but ribs !!
