On February 10, 2019 in Hurghada, Egypt, while walking outside the hotel, I heard the sounds of katydids. I could not see one, until one finally appeared in front of me, so I decided to film it. Never seen one before, looked interesting. Does anyone know what kind of species is this one?

This is a garden variety "field cricket" -- albeit from Egypt. The family this belongs to is the Gryllidae. The sounds you are hearing in your video are the chirping sounds of crickets; not the sounds of katydids. Though katydids belong to the same order as crickets (Orthoptera) they are of a different family (Tettigoniidae).
At present their are more than 900 species of crickets described. However, when compared to the enormity of the katydid family (at more than 6,400 species) described; one could say that the crickets as a family are small by comparison.
Many cricket species are capable of flight and most of them have very long filamentous antennae. These are both strong points of katydids as well which is why I believe you confused the two different families.
